We had some gimmicky, but polarizing and thrilling, episodes before this one, but this was the show getting back to basics. For some that is what they wanted, but for others I feel like they dropped the ball when they had a chance to do something really great.
This show has never abandoned its premise of it all being about the restaurant. Everyone has a different backstory and a different issue, but at the end of the day it all comes down to the restaurant. That is why I think the show works and why shows like The Office and Ted Lasso have worked, when other workplace "comedies" have struggled.
