The DNA model falls apart as soon as Leonard touches it. In The Spock Resonance (2015) Sheldon moves the DNA model out of the way to get to the wall safe without any concern of it falling apart and it stays intact.
When Leonard slapped Sheldon, it's clear he didn't actually hit him.
