Rockets that use cryogenic propellants, such as liquid oxygen tend to collect ice and even condensed nitrogen and oxygen in the case liquid helium, on the outer skin of the rocket which falls off during launch. Insullation is often applied to prevent the condensation and is designed to fall off during launch though it occasionally causes damage.—David Foss
