The "Order of the Dragon" actually existed in Transylvania, where Bram Stoker set his novel, and is the origin of Dracula's name. The Order of the Dragon was founded to uphold Christianity and defend the Holy Roman Empire against the Ottoman Turks. Vlad II Dracul, father of Vlad III ("The Impaler"), was admitted to the order in recognition of his bravery in fighting the Turks. The name Dracula means "Son of Dracul".
Van Helsing (Thomas Kretschmann) makes the statement to Grayson about "the order" that they are like a Hydra, cut of one head and two come up in it's place. Hydra was also the name of an evil organization in the Marvel franchise. Thomas Kretchmann played Strucker, a member of Hydra.
The three words Jonathan Harker (Oliver Jackson-Cohen) writes down on his notepad during his interview with Alexander Grayson (Jonathan Rhys Meyers): "Visionary", "Delusional" and "Egomaniac".
