While driving a football helmet golf cart onto the football field, the "faceguard" of the inflated helmet is torn off and destroyed. As soon as the bad guys exit the helmet the "faceguard" is back again.
Just after the library scene where Jenko drops down one landing at a time and then jumps over the railing, his shoes are flat-soled, instead of the cleats he should be wearing with his football uniform.
When Schmidt is reciting slam poetry, he drops the tambourine. In the next shot it is back on the stool.
Jenko's bullet wound scar moves positions throughout the film.
When Captain Dickson sends Schmidt a bunch of texts to his phone threatening to kill him, his name at the top of the phone screen changes from "DICKSON" to "Dickson" between screen shots.

Factual errors

The events of the movie take place during spring, yet the university is shown playing football games. With the exception of bowl games, college football ends in November.
All of the vehicles included in the spring break scenes have license plates on the rear only. Mexican law requires that each vehicle has license plates on the front and the rear.
The final confrontation happens in a fake locale in Mexico. A local police department would have no jurisdiction to operate outside the borders of the United States. Any arrest that occurred in that locale without local (Mexican) police permission/cooperation would be illegal and the criminals would be nearly impossible to prosecute.
During the climatic fight, one of the goons fires (at least) 11 shots out of a 1911 without reloading. The 1911 can only hold 8 rounds in a standard magazine.

Incorrectly regarded as goofs

When showing the photo of the dealer's tattoo to the artist in his shop, the word "BOOM" is not reversed as it would be when viewed as a reflection in a car window. The photo seems to be an enlargement of the original photo and may have been flipped horizontally when the enlargement was done.
Schmidt has problems driving the Lamborghini, especially with shifting/using the clutch. The Lamborghini shown doesn't have a manual gearbox, so there is no clutch to be operated. A simple pull on two paddles behind the steering wheel changes the gears.

Although very rare, the Lamborghini Murciélago could be specified with a manual gearbox. As there is no clear view of the center console or steering wheel it cannot be confirmed which version it is.
After the treats laced with WhyPhy are eaten and then the drug effect kicks in, we see Schmitt and Jenko's pupils shrink. The drug is known to contain Adderall which is supposed to make the users pupils enlarged.

WhyPhy contains Adderall and MDMA, both of which are known to cause pupil enlargement, however, it is said that the drug is also "mixed with God knows what else", so those unknown elements could be counteracting this response.
The two cops install cameras but not a sound system and yet they have a perfect rendering of the fraternity brothers conversations.

The cameras have a built-in recording device.
When Schmidt is "getting into character" to meet the Ghost, his neck tattoo and teardrop are no where to be found. When he exits the car, they are suddenly there.

However, this is clearly done for laughs.

Revealing mistakes

At the beginning of the movie, Deputy Chief Hardy has one set of stars on his collar upside down.

Audio/visual unsynchronised

When Schmidt and Jenko are in the attic of the frat house, they are holding a tablet computer with the camera feed playing. The audio from the tablet can clearly be heard from the camera feed, however the status bar at the bottom clearly shows the tablet is actually muted. This is also the same for a further scene where a smart phone is being texted on - again, you hear the clicks from the key presses but the mute icon is shown.
At least once in the movie semi-automatic pistol are shown to "click" when they run out out of ammunition, leading to one of the main characters not noticing that he took an empty pistol off a bad guy. Semi-Automatic pistols don't click when they run dry. On the last fired round the slide would lock back, and so would the trigger, making it impossible to mistake the gun for a loaded one, let alone to pull the trigger.

Crew or equipment visible

At the beginning of the film, when Schmidt and Jenko are walking alongside their moving car. You can see the head or the driver clearly visible when it passes the first pillar.

Errors in geography

When Zook tries to recruit Jenko to his fraternity, the weights are branded with the logo of Tulane University.
