Tallahassee destroys a minivan side mirror after the incident with the monster truck. In the very next scene on the abandoned highway the minivan's side mirrors are intact.
When the group is leaving the Hound Dog Hotel, Tallahassee kicks the passenger side view mirror off. The mirror is then visible in several subsequent scenes.
In the first movie Little Rock was 12 years old and this movie takes place a decade later she should be 22 years old but they keep saying she's 18.

Factual errors

Combine harvesters don't produce their own hay bales. Baling requires a separate piece of machinery which can be pulled by the harvester itself or by a tractor after harvesting.
Biodiesel has a flash point as high as 130 degrees C, meaning it would have to be heated significantly before it would ignite from the touch of a flame in the climactic scene.
The Elvis's pink Cadillac was a 1955 Series 60 Fleetwood, as did Tallahassee said in the film, but the car used was a 1957 Series 62 Convertible. Elvis Presley did own 2 1957 Cadillacs, but they were both Eldorados, and neither of them was pink.
When Wichita returns to Tallahassee and Columbus at the beginning, a Florida State Seminole flag is visible on the wall in the background. Notably, the flag features their current logo, which was introduced in 2014. However, the original film is set in 2009, meaning the logo displayed would not have been used at that time.

Revealing mistakes

Just after the bus tires get blown out and they have to drive off in the minivan, you can clearly see cars driving on a busy road in the distance to the left of the city view.

Miscellaneous

On the presidential pardon of Wesley Snipes (six minutes in, during the montage of happy times at the White House), the word "Proclamation" is written as "Proclaimation".
When Columbus (Jesse Eisenberg) is driving the Minivan with Wichita (Emma Stone) beside him, the gear selector on the steering column is in the neutral position, e.g no gear selected, then it disappears, someone forgot to move it.
After the team gets into the monster truck and they buckle their seat belts, a title with 'Rule 4, Buckle Up' is shown on the screen. After being on screen for a second, the '4' in the title is changed to '4A'.

Audio/visual unsynchronised

When the entire crew is in the monster truck mowing down zombies, where Columbus mentions being sick from the movement, in a quick shot, he can be briefly seen laughing and saying something else other than complaining that he was getting sick.

Crew or equipment visible

When Madison is looking at Tallahassee through the binoculars, you can see a finger come up from the bottom right of the shot after she puts the binoculars down for the last time.

Character error

When Wichita suggests a T-700 as a poorer version of the T-800 zombie, Columbus and Flagstaff protest that the T-800 was the first model of Terminator. However, in Terminator mythology, the first model was the T-1 (as established in 2003's Rise of the Machines), and even in the first Terminator movie, Kyle mentions a T-600 series with rubber skin.
In the opening shootout scene, a closeup of Little Rock shooting a zombie in the head shows her finger along the side of the pistol rather than on the trigger.
Nevada claims to be from the State of Nevada (specifically Washoe County, where the City of Reno is) but she doesn't pronounce the state's name the way an actual resident would. The "ne-VAW-da" pronunciation she uses is typically only used by people who don't live/aren't from there. A proper Nevadan would pronounce it "ne-VADD-a."
When Al Roker is imitating coughing up a hairball with Bill Murray, he uses his Motorola Razr to take a selfie. This particular phone model has only a single camera that is facing away from the characters when the phone is flipped open.
