Continuity

The truck which Polly is driving in the early scenes, and which remains parked outside the service station for the remainder of the film, is either a '94 or '95 Toyota 4Runner. However, in the final scenes when the gas station goes up in flames, the 4Runner is replaced with a mid-eighties Isuzu Trooper.
A few minutes after the female state trooper is killed and dragged up the side of the bulking to the roof, the camera cuts to a wide shot from a distance. But there's no body or blood on the building or roof.
The cinder blocks which are in the background during the freezer scene are stacked side by side when first seen, but when seen again to break the bone in the arm of "Dennis" they are stacked one on top of the other.
When Blake Sherman exits the service station he steps on the rubber tube to make the bell ding and his shoes are clean and polished. When he gets up from his chair and walks through the grass his shoes are covered with dust and dirt.

Factual errors

Diesel fuel only burns as a mist. Shooting a diesel fuel-pump with a shotgun wouldn't do anything.
You cannot remove a shotgun from it's bracket in a police car without the ignition turned on and pressing a button. No key, no shotgun.
The back door to the gas station is locked from the inside preventing an exit. It is against fire code to have any door that would prevent free egress (exit), with the exception of correctional facilities or mental institutions.

Revealing mistakes

(at around 1h) Just after Dennis' arm has been cut off you can clearly see him hiding his actual arm beside him, just behind the special effect amputated arm.

Audio/visual unsynchronised

When Dennis is lying on the ground at the end of the film, he slides the shotgun breech closed, but the sound effect is the more recognizable two-stroke of the slide going backward and forward.
