Factual errors

When Vic offers Odo a drink, Odo responds that he doesn't drink. Vic assures him that it's not real booze and Odo then takes the glass. When Odo says that he does not drink, he does not mean in the colloquial sense of consuming alcohol. It has been previously established that Odo is not physically capable of consuming liquids and foodstuffs due to the physical attributes of his species.

Incorrectly regarded as goofs

Vic is able to transfer his matrix to Kira's holosuite to invite her to dinner with Odo, and to hack into the station's comms system to invite Odo. However, no explanation is given as to how he is able to book holosuite time with Quark, nor how it is being paid for.

Vic tells Kira that he is performing for Jadzia and Worf next door and that he is between sets. Most likely he contacts Odo during the same period, so Jadzia and Worf booked the holosuite time and are paying for it.

Revealing mistakes

When Odo and Kira dance, Vic Fontaine launches into a rendition of "I've Got you Under My Skin." He does so without a microphone, yet there is no difference to the audio quality his voice versus the audio quality of when he used one in earlier performances.
During the intro to the "Fever" musical number, the Kira hologram's finger snaps don't quite sync with the audio.
When Odo walks out of Vic's for the final time, he snaps his fingers as he goes. The snapping is well out of sync with the music.

Miscellaneous

Vic asks Odo to come to the holosuite at 9 O'Clock, which he parenthetically says is 2100 to Odo. But Bajoran days are 26 hours long, so midday would be 1300, and 9:00 in the evening would be 2200 Bajoran time.

Plot holes

After the gang's first session in the holosuite at Vic's nightclub, Julian Bashir turns the program's data rod over to the Ferengi bartender, who puts it in a case under the bar with a number of other programs. The Vic's program was developed by Bashir's friend Felix and is Julian's personal property. There is no reason for it to be locked away by the staff of Quark's bar.
Vic Fontaine is aware of his own status as a holographic program yet still relays stories about interacting with celebrities from mid-20th century America as though they are his actual experiences.
When Odo goes to visit Vic to thank him, he walks in after a musical number. No one was seemingly running the program. If Odo was the one who activated it, why would he leave it running for so long before entering? Also, why would he purchase holosuite time from Quark just to speak with Vic for less than a minute? Holosuite time is booked by the hour.

Character error

Near the middle of the episode, right before Jadzia has a conversation with Julian in the turbolift, another Starfleet officer passes Jadzia in the corridor and acknowledges her with a "Lieutenant". Jadzia is a Lieutenant Commander, and as with modern day naval convention, the correct informal greeting would be "Commander".
When asked how he knew Dax and Worf were married, Vic responds that, "When you sing in as many joints as I have, you become a student of the human heart." Neither Dax nor Worf are human. She is a Trill and he is a Klingon.
