It is a bit difficult to determine just how many hosts that Dax has had. At the beginning of the series, she had 7 hosts. In season 2, Episode 4, Verad stole the Dax symbiont for a short period of time. And yet, afterwards, Dax still has had 7 hosts. With the revelation of another host, Jeran, Dax should have 9 hosts in total, (including Verad) and yet she still has had only 7 hosts.
