MacGyver reaches for Steve's gun twice when disarming him.
When Steve turns around to avoid the police roadblock, it is raining and everything his wet. He turns in to a rest area a moment later and when he parks it is sunny and the ground is completely dry.
Mac Gyver's use of a rope to remove/disable the helicopter's tail rotor would not work as seen. The spinning tail rotor would have chewed the rope to bits.
Also, a rotor could not have been pulled off by an old rope.
It is a dangerous practice to be at the rear of a running helicopter as the spinning tail rotor is as lethal as a plane's propeller, if not more so.

The doctor tells Pete and MacGyver that "anthrax causes hemorrhages to all the internal organs and prevents the blood from clotting". There are 4 routes of transmission for anthrax (cutaneous, inhalation, gastrointestinal and injection), each of which has its own signs and symptoms. However none of them cause hemorrhaging to all the internal organs.
The ZIP (postal) code for Marie Morrison is on the envelope as 90914. There is no such ZIP code in the United States of America. In fact no US ZIP codes start with 909. It could be likened to the fictional 555- telephone prefix.
A former military personnel who stole and attempted to sell anthrax would not be sent home to recover, no matter his injuries/condition.
He would be housed in a secure facility until his case is adjudicated.

Incorrectly regarded as a goof. Commander Hillard is a SEAL and is therefore U. S. Navy not Army. His rank is correctly called Commander. Both Army Lt. Colonels and Navy Commanders use a silver oak leaf rank device. Navy line officers wear a rank device on both lapels as is correctly portrayed. MOS (Military Occupation Specialty) badges are used by the U. S. Army but not U.S. Navy line officers. Navy staff corps do wear a device representing their corps but not line officers.
The commander is wearing his rank insignia (Lt. Col) on both collars. It should be that the rank insignia is on the right collar and his MOS insignia (infantry, engineers, armor, etc.) on the left collar.
The registration number on the Bell 206 JetRanger (N9748C) is the same one used on the Sikorsky S-61 in Brainwashed (#4.16).
