When Sawyer is chopping down the bamboo trunk, he is shirtless and there is no sign of the injury he sustained through his right arm earlier in the season. The knife went right through his upper arm and would have left a scar.
If you closely, Jin's handcuff disappears and comes back several times while everyone is getting the raft in the water.
In the airport flashback scene with Jin and Sun, Jin's coffee cup lid changes positions several times.

Incorrectly regarded as goofs

When Rousseau lifts her arms to tie her hair back, her armpits are shaved despite having spent over a decade living alone in the jungle. However, there have been multiple scenes of people shaving themselves, and if Rousseau is uncomfortable with hair in her armpits, she would naturally shave them. It is also possible that she had had laser epilation done in her armpits before she arrived at the island.

Revealing mistakes

When Jack, Locke, Kate, Arzt and Rousseau leave the beach to go to the Black Rock, the shot where they are walking along the rocks at approx. 25 minutes in has been flipped, as Matthew Fox's tattoos on his left shoulder are now on his right shoulder and his left shoulder is clear.
When Sayid shows Michael the flare gun, the primer on the flare has already been struck, as evidenced by the depression in the middle. The flare in the gun is obviously a spent shell, probably used for safety purposes.
When walking through the jungle, Rousseau's hiking boots appear to be brand new, with no marks or discolouration.

Audio/visual unsynchronised

After the airport scene, it cuts to Sun approaching Jin while he is fixing and banging on the raft. The banging sound isn't synced with him hitting the raft.

Crew or equipment visible

As the raft sets sail with Walt, when Vincent runs into the water chasing it, Walt shouts, "Stay, Vincent!" At the start of the next shot, on the right, the crew's vessel/equipment is quite visible. This happens again, moments later, right after Sawyer hoists the sail.
In S1E23 when the survivors are lowering the raft into the water, you can clearly see a second camera crew far to the right on the screen behind a bush in one of the shots.
In S1E23 Exodus (Part 1 of 3), just after they launch the raft, as Vincent is swimming, a cameraman is visible floating on a board on the bottom right of the shot.
The overhead shot of the raft (as it leaves the island) shows a tow bar and cable pulling the raft forward.

Errors in geography

When Walt and Michael are arguing in the hotel corridor, the "Exit" signs are the wrong colour for Australia (they should be white letters on a green background).

Plot holes

It is completely impossible for Sawyer to have traveled to Australia legally. Everybody (except for New Zealanders) must apply for a visa, which includes a background check. People with extensive criminal records are denied visas. In the police station, the Australian police officer reads off Sawyer's long criminal history of committing fraud, referring to him by his real name. They would have seen this history when he applied for the visa. If he had used a phony U.S. passport to apply for his visa and enter Australia, he would have been arrested immediately, not simply told to leave soon.

Character error

Leading a party in the woods, Danielle Rousseau announces that they have reached the "territoire fonce" (dark territory), pronouncing "fonce" with one syllable; in French it ought to be "foncé", two syllables. Furthermore, the word means 'dark' only in the sense of a deep shade of a color.
Ana Lucia says that she's always put in the rear of the plane, where the wheels come down "right under her feet". Her seat was in row 42. Row 42 on a Boeing 777 (Oceanic Air 815) is in the front of the rear seats. The wheels are located considerably further in front of where she was sitting.
