In the scene right after the yellow solar-powered Shelby car is hit by the sniper, you can see a dinged area of missing paint on the fender above the blown tire, indicating that the car was hit there. Yet in the subsequent shots of the car when Michael and K.I.T.T. rescue it and the lady driver from the edge of the cliff, the fender paint is fine.
When the reporter lady escapes from the drunk racers' car, the hooligans toss her bags and camera out of their window, too, as they roar off again. No ordinary camera could withstand hitting the hard pavement - especially at high speed like that - without being smashed, yet right afterwards when the car explodes, she uses the camera to take photos of the fiery scene, and in subsequent images of the camera, it appears clean and wholly undamaged.
Liberty is captured wearing a red dress. When we next see her, she is tied up wearing a completely different outfit.
In the scene, when Liberty leaves the hot tub, one of the drivers takes off his hat and puts it on the water. A second later, during a close up, he has it on again.
When Liberty Cox attempts to take a photo of K.I.T.T.'s dashboard through the side window and K.I.T.T. darkens the glass to prevent the photo, the external shot of the confused Liberty show the usual clear glass with no tint. When she looks closer to see the dash, the dash is dark with all lights off, but the glass is still clear and not darkened.

Revealing mistakes

To jump over the alcohol fueled car, Michael presses the Rocket Fire instead of the Rocket Boost button.
Dorothy's Mustang is supposed to be solar powered but before the first days race she can be seen working on the V8 engine as MIchael walks up and introduces himself. And throughout the course of the race any time the Mustang is seen driving it clearly has a V8 exhaust note. If the car had been powered by an electric motor it would be virtually silent as it ran the race.
When KITT pushes the rock out f the way to save Liberty from the bomb, the rock clearly gives way like it is made of rubber or foam.
After the Charger blows up and they focus on the fiery car, it is clearly no longer a Charger but a Dodge Monaco.

At the starting line of the second days race the set lights can be seen reflected in KITTs side panels as he starts the race.

Plot holes

The announcer at the beginning of the race stated that the winner of the race is the one who uses the least amount of fuel. This means that it doesn't matter who comes in first, or who is driving the fastest. All that needs to be recorded each day is the amount of fuel used in comparison to the other drivers.

Also, again, if the race is based on the least amount of fuel used, revving a car's engine before the announcer declares the drivers to start is the worst way to conserve fuel.
