Continuity

The amount of snow on the top of LeBeau's hat while he is standing during roll call changes from a little snow when LeBeau is seen from behind to a lot of snow when LeBeau is seen from the front.

Factual errors

In requesting tea-making materials for the party, Newkirk specifies "a pound of the best Darjeeling". First, sixteen ounces of tea is grossly excessive for the party. Two ounces of loose tea will produce twenty-five cups; therefore, a pound would produce some two hundred cups - too much for such a small party. Second, Darjeeling, even if not first flush, would be in British-controlled India and difficult to obtain.
Supposedly Carter is hiding in a poison ivy bush. Poison ivy is withered and harmless in winter.
General Burkhalter states that his house is two miles from Stalag 13. Germany was on the metric system at the time, so he should have been using kilometers instead of miles. Three kilometers instead of two miles.

Miscellaneous

Throughout the series, winter was perpetual at Stalag 13 on the Desilu lot. Winds could be heard at great speeds while Klink addressed Barracks Two outside. This did not match up with (plastic) snow falling straight down.

Crew or equipment visible

During the snow scenes when the prisoners are on roll call for Colonel Klink, the fans that are blowing the artificial snow in the studio set can be heard in between the sections of dialogue.
When Newkirk is wearing glasses impersonating a General's wife, productions lights are reflecting off of the lenses.
Production lights are reflecting in Klink's monocle in various scenes.

Plot holes

There is no way that Klink and Burkhalter wouldn't know the faces of every woman at the tea party. Klink indicated that the attendees would all be the wives of generals. As such, all of them would be known to both Klink and Burkhalter. For security reasons they would have received files (including pictures) on all the women. It is also quite probable that Major Hochstetter and the Gestapo would have been aware of the party and provided security, again because the wives of so many generals and field marshals gathered in one place would provide a very tempting target for the Underground.

Character error

One of the women says "I knew it was a wig all along" in perfect English, without a German accent.

Update: There is a high probability that the line was dubbed by someone other than the original speaker, as the voice is different from that used when she was talking to General Burkhalter. It is possible that there was a sound problem that occurred during the camera move made during the time she spoke the line, and that the line needed to be dubbed in. If the sound problem was not discovered until late in the production process, they may not have had time to bring Diana Chesney back to dub it, and used someone else to do it.
