Barbara adds water to jars of tomatoes to preserve them and leaves them on the kitchen table. Even assuming that she had added citric acid (the liquid is too clear to have lemon juice added), and the water is boiling (it was from a pitcher, but the jars did not appear to be hot to the touch,nor was there steam), the tomatoes will not be preserved this way. The jars must be boiled after being sealed in order to kill bacteria. In addition, the tomatoes were neither peeled nor cored before being put in the jars (at least, the extra little one wasn't peeled), and peels and cores are detrimental to preserved tomatoes.
