Spiders appear on the ceiling before Joshua knocks over the spider cages.
Gladys' cigarette jumps from "almost out" to "freshly lit" between shots when she goes into the basement.
When the line goes dead while Deputy Pete is on the phone with the Sheriff, he has the receiver in his left hand, but when he goes to tap on the phone base, there are clearly two hands holding on to the base. When the shot goes back to his face, he is still holding the receiver with his left hand.
When the giant tarantula is attacking the silver radio van, the spider is seen attempting to roll the van over. After a few scene changes the van is pictured from above on its side. Yet in the next scene the occupants within are still standing relatively upright on the floor of the van. The following scene change then shows the van being tipped onto its side.
In the ostrich scene, the mayor comes out of the house with a small flashlight, but in the wide shot he's got a huge Maglite-type flashlight.

Factual errors

Chris and Mike realize the presence of methane in the mine because of the smell. "Domestic" methane gas has a smell added but naturally occurring methane has no odor.
The movie is published with a punctuation error in its title. "Eight Legged Freaks" means "eight freaks with legs" and is pronounced with only three syllables in total. The correct punctuation is "Eight-Legged Freaks" meaning "freaks with eight legs" with four syllables in total ("legged" with two).
In the mall, the Sargent runs out of ammo, but the Pistol Slide doesn't "lock back" as it should when it's empty.

Incorrectly regarded as goofs

The driver of the truck taking the hazardous waste to the mine listens to the radio show on an AM station. Later in the deputy's car, they listen to the same broadcast on an FM station. However, it's possible that Harlan was broadcasting at both modulations.

Revealing mistakes

When the tanker truck is jackknifing, a dolly is visible under the rear end of the tanker.
Both of the times that Mike's face is shown through his digital camera, the device is obviously in playback mode rather than in record mode.
When Sam is in Mike's room and notices the film on the TV, he is watching Them! (1954) However, the television shows scenes from the movie taken out of their chronological order and spanning the entire length of the feature film.
Someone has stated that spiders appear on the roof before Joshua knocks the spider tanks over. The spiders have entered on their own from outside as part of the mutants, Joshua knocking the tank over is just a reaction and par for the course.
Just before Joshua is bitten, in the shot of the spider crawling up his back and neck, the handler/stuntman that the spider is actually on has a clearly visible brown beard, unlike Joshua's white stubble.

Miscellaneous

When they are in the mall and the spiders are just about to break in, the woman goes "Get ready." And she looks behind her and tells everyone to get ready. When she does that, you can see the green garage door to protect them from the spiders already torn apart for the scene when all the spiders start coming in.

Audio/visual unsynchronised

When Chris sprays the perfume on the spider we hear him say, "Mike, you saved us!" but his mouth is not moving.
When Sam is driving the forklift to the door, she says "This should hold them". Her mouth never moves.
There are several instances where the skittering/pounding does not match up with the spiders steps.

Crew or equipment visible

When Chris is hugging Aunt Gladys, a hand is visible pulling on the dog that is supposed to be biting his leg.
In the beginning where Chris meets Aunt Gladys in the office there is a dog biting at his pants. During the shot between his legs, the arm of the animal wrangler can clearly be seen pulling the dog forward by the collar.
When the old barber man is in the store with the pitchfork, the tent starts moving behind him. If you look closely, you can see hands grabbing the tent and pushing it.

Plot holes

In the end when they drove the dirt bike out from the mine Chris says, "Goodbye, Counsela," but he never knew the name of the big female spider.

Character error

When Brett and Ashley are making out in the truck, Brett tells Ashley that he has "a blanket in the back" of the truck. After Ashley tasers Brett, she drives off in his truck, and you can see that the truck bed is empty. Brett may have been lying to Ashley about the blanket, or he was supposed to be telling the truth but the film makers couldn't be bothered putting a mattress in the back of the truck.
