In the scene where Milano is driving the Chevy S-10 and is racing the black Ferrari Daytona, the windows are open in the short shots of the people yelling back and fourth. In the middle shots of the truck and car racing, the windows are closed.
The giant "S" on the truck's sleeper cab reverses in one shot as the truck is chasing the BMW.
After learning the Cannonball is back on, Chief Edsel announces he's closing all westbound highways except Interstate 70. Afterwards, it's Interstate 80 that remains open.
The Jaguar is about to plunge into the ground nose-first, then lands with its nose in the air.
When they are about to start the race, the tail lights of Valentinos Lambo Countach are the original LP500 ones, later when they race Alec and Vic in their Jag, the tail lights are the same as those on the 25th Anniversary edition of the LP500.

Factual errors

Approx 33 minutes into the movie, the black Ferrari Daytona passes the white house, but it only has one person in it (Shari).
When the cop is chasing the Lamborghini on I-70, the line on the road is yellow, meaning a 2-lane highway with 2-way traffic. An interstate would have a white line, indicating 2 lanes going the same direction.
The blue Jaguar XJ-S has a UK number plate, HGX906A, but is left hand drive. It may have been built in UK then converted as cars built for the UK market are right hand drive.
The license plate of the Jaguar is HGX906A, appearing similar to UK registration plates. However, it contains the letter "X", reserved solely for Northern Ireland cars, which do not use this format. Northern Ireland cars would have 3 letters followed by 4 digits.

Revealing mistakes

When Lea watches the pickup change lanes to pass her, the image in the rearview isn't reversed.
When John Candy's character is evading the police backward he drives over the rail road tracks, the footage was reversed as the dust picked up goes down into the ground rather than in the air.

Audio/visual unsynchronised

The engine sound of the Lamborghini Countach in this movie sounds like a V8 (likely a Ferrari V8). Originally the car has a V12 engine.

Errors in geography

When the cop is behind the Lamborghini on the trailer, they enter Missouri. The driver says "now that we're out of Iowa, you're out of your jurisdiction." I-70 does not go through Iowa.
