In the race between the Wraith and the red Daytona they come up on a Ford Escort that the Daytona has to swerve past. A few seconds later the Daytona swerves around it again. Also, during the race between the Wraith and the Firebird there is a brief point of view shot of a car swerving to avoid the same Escort.
When Packard shows up at the lake he has his left hand bandaged. Later his hand is unscathed until he cuts it himself in the car.
When the custom Dodge first shows up at Big Kays burger stand there is repaired damage seen on Packard's Corvette and Minty's yellow Trans Am (the damage is caused by shotgun blasts later on in the movie). Then when they get to road to race after this scene, the damage is gone.
Oggie's dead body is described as - except for his missing eyes - looking like he just came out of a hot tub, yet when revealed he looks ghoulishly pasty with eye sockets that seem burned. Much later on, Packard's dead body looks like he's merely sleeping and would aptly fit the description earlier given Oggie.
After Oggie's death the brace on the Wraith's right arm vanishes. When the Wraith later goes to the chop shop and shoots it up the brace is back on his arm.

Factual errors

At no point during the movie is the blower on Minty's Firebird ever shown to be functional despite having two carbs mounted on it. The butterfly valves on the air intake never open either. Normally it's impossible for an engine to run this way; however, when the blower is ripped off during the crash, there are a few frames showing it has no rotors inside.

(addition) It is possible that the blower is cosmetic and does not work. There would be no rotors inside it and there would be no need for it to function. It also would not inhibit the performance of the vehicle.
When the Wraith rammed into the back of the Corvette, ploughing it through several gravestones in the process, the latter can be seen drivable appearing undamaged whereas in reality the front of the Corvette would had been severely damaged rendering it underivable after destroying far less than that number of gravestones.
After the garage shootout Packard's Corvette shows large repairs on the back, although it was only shot on the front.
The police cars and ambulance have no unit ID numbers on them.
At the end of movie, moon in the sky is clearly overlaid over original scene and its face is rotated 90 degrees to the left.

Incorrectly regarded as goofs

The flashback shows Keri and Jake making love when the gang busts in and kills Jake. Yet Keri does not know it was them, although there's no way she wouldn't have seen or heard them. It's explained in dialogue Keri's head had been "smashed in," causing memory loss.
Incorrectly labeled as a goof: In the movie's opening race, they end up where they started, yet they took no turns to get (back) there. (The cars do indeed reach the finish line, they skid to a stop and turn back toward the direction that they came from).
In the graveyard, a gravestone reads a first and last name, then an indecipherable four letter word underneath. No lifeline years, no epitaph, nothing else.

Revealing mistakes

Pack's knife is surprisingly clean given all the blood he just squeezed out of his "cut." If he had actually cut his hand by squeezing the blade, instead of just popping a squib behind the blade, there would be blood squeezed onto both sides.
When Packard gets out of this Corvette on the graveyard there is a gravestone resting on the windshield which hasn't been there before. Also, when he removes the gravestone it appears to be very heavy, yet it doesn't leave a single scratch on his car.
Pack's breath is visible when he talks with the sheriff the first time, revealing that it was actually winter when filmed. The previous scene of frolicking at the beach suggests warm weather.
About 30 secs into the final race, Packard is seen pushing his shifter upwards. The car is an automatic transmission and when he pushed the gearshift up it would have blown the trans out of the car.
After the red Daytona crashes into the interceptor it has serious front end damage including completely destroying the headlights and indicators. When it then launches off the cliff the damage is gone and all the lights are again intact.

Miscellaneous

How did Jake obtain an inflatable mattress with which to float beside Keri? Doubt it was on his dirt bike.
When the sheriff rolls his driver side window up at the end of the movie, there is what appears to be a horizontal black magic marker line near the top of his window.
When police engage pursuit of the red car and the Wraith, the police license plates differ from those of the red car and earlier cars shown. The Arizona civilian vehicles have red on white plates while the police cars have brown on orange ones. The attending ambulance has yet a different colour plate.
When the Wraith enters the chop shop with a weapon, he is told that the building is full of ether and may explode if he fires. He fires many shots but nothing is set off.
In a few scenes when either Loomis or Packard's wrists are visible, it appears they are wearing the same wrist watch.

Audio/visual unsynchronised

When Keri walks home after Pachard's death, her stockinged feet sound like hard leather shoe soles against the pavement.

Crew or equipment visible

Near the end of the movie, Jake says to Keri "You know who I am." and then they kiss. Only the back of his head is shown, but the person kissing her has different color hair and a different hairstyle. This was probably an insert shot, and a stand-in was used if Charlie Sheen wasn't available.
When cars come off the car carrier at 1hr22m in, you can see a plate with a single dent from the thumper (an explosive FX device) to pitch the cars off the trailer.

In the final race scenes, the two camera mounts on the front of the Corvette are clearly visible. They stick out like proverbial sore thumbs. Those mounts are used as the Corvette drives up to the rear of the car hauler, giving a great low angle speed shot. The rear camera mounts are more readily hidden by the "damage", but give a great left rear quarter panel speed shot of the Wraith car and Corvette racing.
When the car with Jamie's body in the trunk is pushed over a cliff, the camera tripod and the feet of the camera crew are reflected in the shiny finish of the car's fender.

Plot holes

The editing suggests that Rughead (Clint Howard) was having the flashback to Jamie's murder, which isn't possible. He wasn't involved, as even Skank points out later to not let Rughead be a witness to the gang's crimes.

Character error

When the carhop brings food out to Loomis' car, she says "No charge for the sarge" and he replies "I'm a lieutenant you know." He is actually the sheriff, which is the highest ranking law enforcement officer in any given county, a rank much higher than lieutenant.
When Skank tells Gutterboy to load the shotgun, he incorrectly calls the ammunition "bullets" instead of "shells"
