The gold dagger that falls out of the shattered skull is considerably larger than the skull itself.
The adventurers enter the first cave in broad daylight, but it's dark when they exit approximately five minutes later.
Leo is bound at the hands while hanging over the boiling water. After he and Max force the rope to snap near the middle, Leo's hands are somehow unbound.
In the scene where Max frees himself, and Leo from being tied down under the sun, somehow Leo's right foot becomes untied with out Max cutting it.
After giving the last rites on the train, Leo removes the purple stole. In the next shot, as the soldier says, "Gracias," Leo is wearing the stole again.

Factual errors

Aztec" and "Mayan" are used interchangeably to refer to the hidden treasure and the culture that hid it.
When Leo is speaking Spanish to the soldiers he's says "rapido" so the soldiers can lower his weapon. Rapido means fast or rapid in. Spanish. He should have said "Bajalo Por Favor" which means "Lower it please"

Incorrectly regarded as goofs

Volkswagon Beetles float. When driven into the water, their Beetle began sinking immediately.

New Volkswagens are airtight and do float. Old, beat-up Volkswagens with open windows and rust holes - not so much.

Revealing mistakes

An editing mistake occurs when Patricia looks at the dagger and then briefly gives it back to Leo from a wide shot, but then suddenly she's doing the same scene from a close shot.
When the trio is heading to San Miguel on the plane, the pilot tells Leo that there is a small fire in the engine. When the plane is landing you can see that the fire isn't in the engine but a device on the left strut of the landing gear is emitting sparks and smoke. Obviously a special effects device.

Miscellaneous

Throughout the movie, Coyote's eye-patch switches from one eye to the other.

This movie is a comedy.
As Louis Gossett, Jr. gets his hands cut free, he lifts one of his hands off the ground, showing he was never tied down. (Beginning of film)
At 1:14:20 when they are sitting by the fire about to kiss, a flash from an unknown source is seen at the left side of screen.
