When Hunter kills the third Pentangle hunter (Delaney) he stabs him in the stomach. In the next scene the knife is several inches higher in his chest instead.
A different truck is used for the jump stunts (on the draw bridge and the junk yard). Most obviously it has only one pair of headlights and a large "4x4" sign on the radiator.

Factual errors

When Hunter fights Lavall in the swamp he blocks a strike from a Katana blade with a wooden pole. A real life Katana blade would easily cut through that pole.

Revealing mistakes

When Hunter and the boy fall from the roof of the burning house, a real stuntman plays Hunter, but the boy is obviously a dummy.
A supposedly dead body moves its leg to avoid it being stepped on by the hero.

Miscellaneous

During the great fight, you can tell where the stunt double for Glastenbury was used by the wig he is wearing. The gray wig the stunt double wears is much more dense than Glastenbury's character is shown to be wearing throughout the film.

Crew or equipment visible

In the final fight between Hunter and Glastenbury, a crew member can be seen in the stairs.

Plot holes

The bad guys view a slideshow of photos taken during the parade attack, but the images are of moments at which there were no people with cameras ever seen. In fact, none of the parade-watchers on screen had cameras in their hands or hanging around their necks. The worst example is a medium range photo taken during the rooftop chase, when there was only Matt and the shooter he was after seen up there. Even presuming some random witnesses stopped running, dug out their cameras, and snapped some pictures, how could the bad guys have tracked such unknown photographers and gotten slides made by the next morning?
Doubtful that Cajuns and White Supremacist would co-exist in a friendly manner as depicted in the film's climax especially since the former has had a history of being discriminated for their Cultural difference of language (French) and religious beliefs (Roman Catholic) plus some have mixed racial background primarily Native American.
Doubtful that a white supremacist group would use the buggies of African American mothers and babies to hide their automatic weapons.

Character error

When the parade attack began, Larry Sr. was standing close between his wife and Larry Jr. and could have easily pulled them down at the same time, but he pulled his wife down first with both arms then got up (too late) to pull down Larry Jr. (who was already shot).
