As the "Bandit" and Buford drive into the stunt show, the sign outside the gate says "Mississippi State Fair". The next scene shows that they are actually on the racetrack at Hialeah Speedway in Hialeah Florida.
The stunt driver double for Jerry Reed is a heavy-set man in contrast to Reed's slim build. This is because in an earlier version of the film, Jackie Gleason also played the role of the Bandit. The man was Gleason's double.
The great white shark logo for Enos Fish & Chips has Enos spelled as Enis.
The sign on the tanker truck for Enos Dairy has Enos spelled as Enis.
During the milk truck scene, as Buford crashes through it, you can clearly see that the light bar, as well as the fish are knocked completely off. Upon the next shot of the car back with all four wheels on the ground, they are both still there.

Factual errors

Because it has no doors, fenders, bumpers or body, Buford T. Justice's car is obviously not roadworthy.
Buford T. Justice is in hot pursuit of the Bandit--and drive over explosives. The explosion would have totally destroyed Buford T. Justice's car. Not only that, but Buford T. Justice and Junior would likely be killed by the explosion.
Because it has no lights (except for the police bar lights held by Junior) or license plate, Buford T. Justice's car is obviously not street-legal.

Revealing mistakes

During Cledus' initial drive of the Trans-Am, he drives past some farm girls and waves out of the open roof at them. One interior shot of him waving shows him sitting on the right-hand side of the car, immediately followed by an exterior shot of him screeching to a halt which shows him sitting on the left-hand side of the car. Either the film was reversed, or the film makers used a mix of left-hand-drive and right-hand-drive cars.

Audio/visual unsynchronised

Some of Buford's dialogue does not match his mouth movements.
After Buford falls of out the window the lady cuffed him to, while Junior is getting up, the sound is saying "Daddy, I think I should get the keys now", but Junior's mouth is not moving.
When Sheriff Buford T. Justice is getting in the car after Tina says "But Boo, what about me", his reply doesn't match his lips. Audio and subtitles say "I am interested in pursuit, not party time." but his lips say "I am interested in pursuit, not poontang". Obviously the overdub was done for censorship purposes, but detracts from the line and therefore the movie.

Crew or equipment visible

During most scenes that have a close-up of Sheriff Justice in the car with his sunglasses on - you see the crew lights reflected.
In one close-up scene with the sheriff in the car you see the cameraman's reflection in the windshield of him sitting on the hood.

Errors in geography

Fannen County does not exist in Florida, not that it matters. Movies are full of fictitious locations.
Shortly after the jump through Big Enos' milk truck, we see Buford and Junior driving past some high-voltage power lines on their trek across Florida to Texas. This stretch of road is US Highway 27 across western Broward and Palm Beach Counties in Southern Florida. The power lines appear to be on Buford's right side, which suggests he is driving on US-27 South towards Miami, when they should be driving North to get to Texas. Clearly Buford is driving in the wrong direction.

Character error

In the first two films, Big & Little Enos Burdette are referred to as "The Burdettes". But in this film they're referred to as "The Enoses". Additionally, wherever the Enos name is written in the film, on the shark prop, the milk truck, etcetera, it's misspelled as "Enis".
