About 50 minutes into the film, when Maude is doing donuts around the officer, the driver-side window of the truck is alternately up/down between shots.
When Harold tells his mother he is getting married he gives her a double-sided photo, on one side a flower and on the other what appears to be a picture of a man with a beard.
However, the photograph is indeed a picture of Maude. The 'beard' is just an unfortunate dark shadow below her nose. It was probably taken in strong mid-day sunlight.

When Maude pulls the banjo out of a cabinet, you see the reflection of crew and lights.
When Harold starts screaming that he is going to kill Maude to his Uncle you can briefly hear a crew member laughing.
