The tune is The La Sorella March by Charles Borel-Clerc (1879-1959). In 1905 music hall star Felix Mayol (1872-1941) put words to it and it became a very popular song called La Mattchiche.
It is broadly about the latest spanish dance, the actions and how well his girlfriend dances it.
Annelore's version features some of Mayol's lyric but appears to be part improvised.
A US version called The Maxixe was also popular, and became Dean Martin's Choo'm Gum Song.
