Continuity

Throughout the film, O'Hagan is addressed as "Captain," and has Captain's Bars on his Duty Uniform. However, at the banquet, he holds the rank of Sergeant.
In the syrup-chugging scene, three empty, open syrup bottles are on the table. Mac then throws one of the bottles at Officer Rando. The shot pans back over to Mac at the table, where the syrup bottles have caps.
When Rabbit and Thorny announce the bust, the blonde stoner jumps up against the wall. In the next shot, he is standing in front of the cops.
At the beginning, the stoners' car windows are down/up/down between shots when the cops talk to them.
When Mac is being chased in the white Miata convertible by the State Troopers in the beginning of the film, the lead patrol car loses its driver-side, front wheel hubcap coming off the highway ramp. In the very next shot of the car, the hubcap is back.

Factual errors

When the State Police barracks are shut down, the troopers along with the captain would not have been fired or let go. They would have been assigned to another barracks or division around the state, but not fired.
Rabbit, driving the Porsche, speeds by Farva at the gas station. Yet Farva somehow uses his Camaro to block the road in front of Rabbit.
During the banquet scene all of the highway officers are wearing their ceremonial uniforms. However the chevrons or arrows on the shoulder all point down. In the US, the chevron or arrow insignia should be pointing upward (inverted). Also Grady's uniform has 3 chevrons/arrows which indicates that he is a sergeant and not a captain. Likewise the two chevrons/arrows on the other men's' uniforms indicate the rank of corporal. Furthermore, the chevrons should also appear on the officer's day-to-day uniform as well as his/her ceremonial attire.
When Unit 91 calls Farva about a white Caprice, the car is actually a Ford Crown Victoria.

Incorrectly regarded as goofs

When the stoners are telling the guys where to put the keg of St. Anky beer, you can see "Anheuser-Busch" on the rim of the keg. Beer kegs are re-used time and again and not always by the same company. Thus the name on the rim needn't match up to the contents. Smaller breweries are especially likely to use old kegs from another, larger brewery as it's a lot more cost-effective.

Revealing mistakes

During the Miata chase, there is a quick cut to show the driver shifting gears. The parking brake is engaged.
In the Winebago scene, when Police Chief Grady pulls his pistol, you can clearly see it's a Markssman 1020 Repeater Air Pistol.
Foster's Car Number 91 has the license plate 9145. The same plate appears on the Plymouth Voyager in the scene with Ramathorne and Farva.
In the scene where the governor is visiting Spurbury, when Mac is about to leave the building, you can see Ursula enter the frame early. After Mac hits Farva in the stomach, she enters the frame again and leaves the building.
When O'Hagan discusses the bulletproof cup prank and holds Thorny's pistol off to the side, the gun is clearly higher than his patrol car and aimed at a slightly upwards angle when it fires, yet the car's window still shatters when "hit".

Miscellaneous

In the scene where Mac bets Foster that he can't say meow ten times as he is writing a driver out his traffic ticket he actually says meow eleven times.

Audio/visual unsynchronised

When Thorny is getting ready to shoot Mac to test the bulletproof cup, he draws his gun and touches the top of it. The gun makes a noise as if he was pulling the slide back and a round was being chambered, but he never pulls the slide.
When Thorny is about to fire at the bulletproof cup, you can hear the "click" of a safety being disarmed. He is carrying a Glock, which has no manual safety, and would not make that "click."
When Ramathorn and Rabbit are back in their cruiser with the German speeders in the back, Ramathorn tells Arlo to climb on Rabbit's lap, who then sits in the middle. The German woman in the back moves her lips, but no sound comes out.

Crew or equipment visible

When they leave the highway during the Miata chase, cones blocking the road and a crew member directing traffic are visible to the right.
When the pig makes the Winnebago rock after the fight between the local cops and the troopers, you can see the feet of crew members rocking the vehicle.
When Rabbit approaches the stolen Porsche, the crew is visible on its surface.
In the opening chase scene, when the Miata makes a hard right onto the rural road before the bar, in the background you can clearly see a line of orange road cones and a police officer standing next to his car redirecting traffic.
Reflected in the side of the patrol car as it pulls up.

Character error

When Farva tells Rabbit about the 1975 Country Music Awards, he says that Charlie Rich set the award on fire when John Denver was announced as the winner. Charlie Rich set fire to the winner's certificate - the form inside the envelope with the winner's name; not the actual award.
When the Troopers call in the tag number for the local police car, they identify the car as a Caprice, when it is clearly a Ford Crown Victoria.
At the beginning, the kids in the car say they're going to Canada. As the Miata drives past, a road sign with the letters "Cana" is visible on the edge of the screen. However, when Rabbit calls it in, he says the Miata is headed "southbound on Route 294". Canada is north of Vermont.
Right after Mac and Foster come back from the weigh station, he tells the chief that the cruiser weighs 16,000kg. The actual weight of a Crown Victoria is about 1,600kg.
Farva and Ramathorne say that the Plymouth Voyager's license plate is "Alpha God Mustard One Niner Decade China", which would be AGM19DC. When they pan back to the van, the plate clearly says 9415.
