- Gordon encounters Oceana: a failing restaurant with one hot-tempered co-owner, a rude and ignorant chef, and to date perhaps the dirtiest kitchen yet.
- Gordon visits Oceana, a seafood restaurant in New Orleans, LA, that suffers from many problems, including bad food, termites, and even safety issues. Brothers Moe and Rami both were given the reins from their father to take over the restaurant so he could retire. Though Rami is the easy-going one, Moe is another story, he is angry, obnoxious, and hot-tempered. Rami also has doubts about their arrogant head chef Damon, who is not concerned about quality, but Moe feels he gets the job done.
When Gordon arrives, he decides to taste the food, including old gumbo, soggy crab cakes, and very tough duck. Gordon then confronts the owners and Damon, who almost comes to blows with him, but is immediately separated by Moe. During dinner service, Gordon discovers a nightmare in the walk-in fridge, consisting of spoiled jumbalya, pre-cooked pasta, and milky crabs, and even three dead rats in the kitchen. Gordon forces the owners to shut down the restaurant. Moe finally thinks Damon is not the right chef for the place and fires him on the spot.
The next day, Gordon has a sit-down with the owners and is shocked to discover none of their recipes are written on paper. Moe then goes on the warpath when Gordon calls him out about it, but he eventually is forced to go along with Gordon's changes, whether he wants to or not. On the night of relaunch, Moe decides to leave the restaurant to "take a little break" and at the end, Gordon ponders whether Moe should be in the restaurant after tonight's display.
