The main difference is that pinchos are usually 'spiked' with a skewer or toothpick, often to a piece of bread. The toothpick is used to keep whatever the snack is made of from falling off the slice of bread and to keep track of the number of pinchos the customer has eaten. Differently priced pinchos have different shapes or have toothpicks of different sizes.
The term "Pinchos" (Basque: pintxos) is used in Asturias, Navarre, La Rioja, the Basque Country, Cantabria and Salamanca. Edit (Coming Soon)
