      Fred Harvey (1835-1901) created the first chain restaurant with Harvey House in Kansas in 1876; his company owned 84 restaurants at its peak. "Harvey Girl" waitresses were white women, aged 18-30, with an impeccable reputation. All expenses were paid, and they were not permitted to marry for one year. About 5000 women moved West to work for him and eventually marry, and Fred became known as "the Civilizer of the West." The Emporia, Kansas Harvey House opened in 1880 and closed in 1937; the train station it was in burned down in 1999 after being vacant for over 10 years.
