It's very busy in the kitchen and Gareth, as always not easily pleased, sacks yet another staff member. Tariq is the victim. Sous chef Alice makes it very clear she regrets his decision because the restaurant is ludicrously overbooked and the kitchen is desperately behind with orders. She wants to hire more staff. Gareth and Janice decide to look at some applications, but there's no one that piques their interest. Then Gareth hears one of the applicants worked under chef Gustave LaRoche at Le Provencal in Carterton. Gareth once ate in his restaurant twenty years ago and thought his goose liver brioche was miraculous. They decide to visit him.
