This list is far from complete, but it's a start.
I have watched other movies. Before you tell me that Bommarillu and Anukokunda Oka Roju aren't on this list, let me say, I've seen them. They weren't to my taste, which is what this list is about.
These are movies that aren't quite standard Bollywood for one reason or another. Some are not made by Indian directors, but a movie about India made in Hindi or another Indian language seems to me to deserve consideration here. Some of these are closer, and others farther from the "Bollywood" masala model. All are movies that I consider excellent.
This is for movies that are helpful in understanding Native Americans and issues related to them.
My purpose here is to create a list of movies that would help to give a gist of some Indian history. I do not recommend that you rely on these movies for absolute accuracy, though some are better than others. (Gandhi for instance, is much more closely documented than Ashoka the Great, which is a song and dance extravaganza that loosely relates to the life of the subject).
I do believe that these movies are useful for introductory purposes. Before accepting anything in these sorts of movies as fact, I recommend doing some background checking. But these movies might motivate you (as over the years they have motivated me) to care enough to do some serious research and reading.
Unfortunately, a lot of movies that I would like to put on this list are not on IMDB, and I found difficulty in getting the information needed to put them onto IMDB. This list is not remotely completed yet.
Older movies that are recommended if you want to understand the Bollywood scene. I am no pro, but these are ones that I like, and that are still well worth watching.

A list of some movies that are worth watching if you want to get a feel for what Bollywood is at its best IMHO, of course. With one exception, all of these are movies I really like. These movies are not necessarily in the order of quality or importance.
Amitabh Bachchan is one of the great stars of Indian cinema. However, he has very rarely said "no" to someone approaching him with a job, and so some of the movies he has starred in have been less than wonderful. I have yet to see a poor performance by him, but I have watched some pretty pathetic movies in which his good work was not enough to overcome the other problems. These are some of the movies that Amitabh Bachchan has been in that I like the best.
Communal violence has been a difficulty in India since partition and before. It has been considered in many ways in Indian cinema.
