The "Island" was actually a 4 acre nature preserve in Ft. Lauderdale, in a warehouse complex, along the flight path of Ft. Lauderdale/Hollywood International Airport. This mean that all the "Island" scenes in the movie were filmed in increments of between 1-4 minutes or between take-offs and landings of planes.
The bar scene in the final version was actually a conglomerate of 3 different bars shot over a period of six months. The producers were so dissatisfied with the footage from the previous two shoots that they re-shot the scenes. In actuality there were 4 locations used as the exterior shot was an entirely different location to give the bar the appearance of being in the middle of nowhere.
South Florida, which normally has very mild winters, was subjected to two extreme conditions that delayed filming. The first was a torrential downpour lasting 2 days that flooded the "Island" location (a nature preserve in Ft. Lauderdale)and turned it into a mini swamp. The second was a record cold snap the weekend our "cannibals" were meant to be performing. This would have meant putting 5 half naked women outside in 30 degree weather. (The producers cancelled shooting that weekend).
