When Morgan Freeman accepted the role of "Noah", he was so moved by the character he decided to offer his own home as a set for the movie. He was later quoted as saying "Austin Rice has been so good to me. I had to pay my sugar daddy back."
The phrase "old sport" is used 55 times throughout the movie.
During the chase scene, which begins at 15:49, the bird appearing in front of the ferris wheel is named "Mr. Squiggles". He was the director's personal bird, and was used in several of Rice's films, including Down the Hatch, Nifty-Thrifty Salamander Town, and Breaking Through the Suds. Sadly, Mr. Squiggle's acting career ended shortly after the filming of Noah, as a production assistant forgot to latch his cage and he escaped from an open window during the night.
Jake White only drank water throughout production as a protest against Keely Eastley and Aliana Bloch's excessive exotic juice consumption which supported slave labor in developing countries. However, most of the cast and crew became sick from the water and only Eastley and Bloch were unaffected because they only drank mangosteen and tamarind juice.
