To pitch the show to the Fox network, the creators of the show made a rough three minute demo of the scene where Bob and Linda are grinding the meat and Bob forgets their wedding anniversary. The differences between the demo and the scene in the actual show included very different character designs by Jay Howell, cruder animation and the Belchers were originally a family of cannibals, making burgers out of the flesh of their victims. However, Fox found the idea of cannibalism too dark for an animated sitcom so it was taken out. Although, this led to the plot of the first episode where the family is accused by the health inspectors of being cannibals.
Despite having three females in the Belcher family, Louise is the only female character to be voiced by a woman. Additionally, both of the Pesto twins are voiced by women; Laura and Sarah Silverman.
In the beginning credits, the building to the right of Bob's restaurant changes every episode. The signs for the building in Season 1 in order are: P.F.E.T.A (Meat is Murder), Trot's All Natural Fertilizer, Rent Reduced Crime Scene Special (with police tape around it), Meth I Can Methadone Clinic, Synthesizers! Synthesizers! Synthesizers!, Extra Moist Yog (hot yoga), The Horse Renderer, Attempted Crepe French Cooking School, STD-B Gone! Free Clinic, Rocky Refuge Raccoon Sanctuary (referenced in the episode), Bass Drum Emporium (The only 24 hour drum shop in town!), Magnum G.I. Colonoscopies, and Chris's Brisses.
In the pilot demo for the show, the character of Tina Belcher does not appear. Instead, the eldest Belcher child is a son named Dan. Although Dan's appearance is distinct from Tina's, the two characters are voiced identically by Dan Mintz.
It is revealed that the characters live in New Jersey as it was shown in It Snakes a Village.
The cast records their dialogue together for every episode. Some of the cast live in New York City while the rest live in Los Angeles so they record over an ISDN line.
The daughters 'Tina' and 'Louise' are named for actress Tina Louise, best known as the original Ginger Grant on Gilligan's Island.
An ongoing joke in the series is the fact that the building to the right of Bob's Burgers changes every episode. In Season 2 the building's signs in order are: Uncle Marty's Breast Pumps, Hannibal's Dead Animals Taxidermy, Pookah Pagoda Pookah Shell Warehouse, A Fridge Too Far Used Appliances (Clearance Sale), That's Improv-able Improv Theater (Tickets on Sale Now), Stickers For Men (Now Open), Grindecologist Coffee Shop S (possibly "Supply"), Valley of the Doilies (Sale 50% off), and Yes, Wire Hangers.
Tina is the only Belcher so far to have her middle name revealed. It is Ruth.
In the episode "O.T. The Outside Toilet" when Bob walks into the kitchen wearing a suit, Louise jokingly calls him Don Draper. Jon Hamm, who plays Don Draper on Mad Men, voices the toilet in this episode.
Linda and Gene are right-handed, Tina is left-handed, and Louise and Bob both appear to be ambidextrous.
There is actually a Bob's Burgers restaurant chain based in Rio, Brazil; Albuquerque, New Mexico; and Bellingham, Washington
The Belcher Kids and their friends attend Wagstaff Middle School, which is named for Professor Quincy Adams Wagstaff, the character played by Groucho Marx in the movie Horse Feathers (1932). Compounding this nod to the Marx Bros. classic, Louise's nemesis Logan attends Huxley High School which takes it's name from Huxley University, over which Professor Wagstaff presided.
Bob appears in S4 E1 of Archer "Fugue and Riff".
In the opening of each episode when the exterminator van is parked in front of the restaurant for a second you can see Jimmy Pesto's reflection in the window of the van.
Bob's friend Mort runs a funeral parlour and crematorium. Mort actually means death in French and other languages.
The name of the town the Belchers live in is Seymour's Bay, revealed by Loren Bouchard in Comic Con 2015.
Two episodes find the Belcher kids dealing with an annoying girl named Courtney, played by David Wain, who directed Bob Belcher's voice actor H. Jon Benjamin in both the 2001 comedy Wet Hot American Summer and its recent prequel series on Netflix, First Day of Camp.
The episode titled An Indecent Thanksgiving Proposal makes a reference to the Hayao Miyazaki animated film My Neighbor Totoro when Lance the turkey comes to life in Bob's absinthe-induced dream.
There is a chain of Bob's Burgers in Albuquerque, NM
An exterminator van drives by the store front in every episode, with a different name.
Practically every episode has at least one reference to flatulence, usually from Gene.
There is also a chain of Bob's Burgers in NW WA state (US); Bellingham, WA
We know that Bob's mother's maiden name is Lombard.

There is an actual Bob's Burgers restaurant in Westminster, CA on Beach Blvd.
H. Jon Benjamin, Jenny Slate, Megan Mullally, Aziz Ansari, Billy Eichner, Keegan-Michael Key, Rachel Dratch, Jon Glaser, Nick Offerman, Ben Schwarts, Tuc Watkins, Kathryn Hahn, and Henry Winkler have either starred or made an appearance on Parks and Recreation on NBC.
Many episodes contain at least two story lines.
Bento Box (the company that makes Bob's Burger's) is the same company that Dan Aykroyd and Judy Belushi teamed up with to make the Blues Brothers Animated Series, which was canceled, before it aired.
