Lucy Heartfilia, one of the characters of the series, is named after one of The Beatles songs "Lucy in the Sky with Diamonds".
Hiro Mashima based Natsu Dragoneel's feisty personality off from himself when he was a teenager.
The anime was suppose to end after the Daphne filler arc, that's why there is no hints about Gildarts in the early episodes. However, Fairy Tail became so popular, they continued the anime making Gildarts a regular part of the cast as well.
Natsu Dragneel was originally going to be a celestial spirit with horns.
Gray Fullbuster (one of the characters, who is an Ice-Make Mage) is seen smoking often in the Manga of this series, but never in the anime.
The shopkeeper in the first episode is also the black market magic dealer in the Edolas arc.

Todd Heberkorn, Natsu Dragneel's English voice actor, has a guild mark tattoo on his right arm just as his character does.

Sky Dragon Slayer mage Wendy Marvell was originally supposed to be the Water Dragon Slayer and possessed a wand in her original concept sketch. Her name is a leftover still connected to the initial idea of her being the Water Dragon Slayer; "Wendy" is the final evolution of a list of several tentative previous names that began with the Japanese kanji for "water."
