They look like octopuses only 200 ft tall with pink bioluminesence. A scene from the movie depicting the creatures is shown here. More like 20 feet tall than 200 according to this picture though. More photos can be seen here, here, and here.

Although you see the 'Monsters' mate and the two protagonists kiss then the closing credits, the beginning of the film is chronologically the end. At the start of Monsters the movie shortly after the extra terrestrials attack the convoy, we see the military opening fire on the aliens and we see Samantha laying on the ground. Whether she is dead or unconscious is not clear. We then see Andrew drag her to safety and is screaming for help. We over-hear the military on the radio saying they would call in an airstrike that would be less damaging to the area than carpet-bombing. We then see a quick cut of Andrew running away from the scene carrying the limp body of Samantha in his arms. Then we see the point of view of what appears to be a tomahawk missile heading straight towards the alien. Then the title of the film appears.
