Heston creates and prepares what he considers the perfect Christmas meal for six special guests. He believes that the food not only has to taste good, but that the atmosphere has to provoke a sense of Christmas magic. As such, he sets the mood by having the meal in a mock winter wonderland. He starts the meal off with an aperitif of mulled wine which has an element of both a hot and cold extreme, edible Christmas tree ornaments, and a mandarin mousse which allows its consumers to be able to exhale vapor. As a starter course, Heston wants to provide his guests with the traditional Christmas gift of gold, frankincense and myrrh, which are incorporated into the dish. He serves goose as the main course, complete with the tastes of Christmas tree and chestnuts roasted on an open fire. For dessert, Heston looks to a more secular Christmas tradition for inspiration. He serves reindeer milk ice cream with mincemeat brioche French toast. It is made to resemble scrambled eggs and bacon on toast.
