David Labrava, who plays Happy Lowman, is a real life member of Hell's Angel MC. He was hired as a technical advisor but asked Kurt Sutter for a chance to be on the show. He won't talk about his association with Hell's Angels (though photos of him wearing his kutte can be found online and he has the death head tatted on him). Its said he's currently an inactive member since doing the show, but is still in good standing with the club.
The scars on Tommy Flanagan (Chibs) face are very real. He was jumped when he was younger and that resulted in the scars.

Katey Sagal (Gemma) has been married to the series' creator Kurt Sutter since October 2004.
Kurt Sutter, the show's creator, plays Otto, the Sons of Anarchy member in prison.

According to an interview with Kurt Sutter, the pilot episode was entirely shot with actor Scott Glenn in the role of Clay Morrow. After deciding to go in a different direction with the character, the role was re-cast with Ron Perlman and Clay's scenes were re-shot. Also, in the pilot there is still a scene where you can spot Scott Glenn as Clay, after they blow up the warehouse at the end of the episode there is a shot of the Sons running away from the explosion. Scott Glenn can be seen in the foreground and you can also see Emilio Rivera in the group as he was originally cast as a member of SAMCRO but then re-cast as the leader of their rival gang; The Mayans.

Kurt Sutter has stated several times that the homeless woman was always meant to be ambiguous and that the audience can make up their own interpretation for her.

Conflicting information has been found that Kurt Sutter said he wrote the character as an embodiment of Jesus Christ, but tried to leave it ambiguous. It's still open to personal interpretation of each individual.
The final episode aired on December 9, 2014. The next day the creator, Kurt Sutter released a book about the show.
In season 2 ep 2 Jackson says to otto's wife, "Relax I didn't invite you here to Adriana you." This is a reference to The Sopranos (1999) and how the character Adriana is killed. Adriana in The Sopranos is played by Drea de Matteo who plays Wendy in this show.

In 2012, while being interviewed by Terry Gross on the NPR program "Fresh Air," Katey Sagal said that at least one song performed by her has been included in every season of "Sons of Anarchy."
Walton Goggins role came about because he read an interview where creator Kurt Sutter explained why Michael Chiklis and Goggins hadn't guest starred on the show like many actors from The Shield (2002). Sutter explanation was that their characters were too associated with the actors and audience would think about Vic and Shane seeing Chiklis and Goggins. Goggins then called Sutter and, to prove him wrong, he suggested playing a transgender character.
There are actually 4 real life Hells Angels members to have parts in the series. "Happy" was played by real life H.A. member David Labrava. "Quinn" is a real life Angels member Rusty Coones. "Lenny the Pimp" is played by real life Angels member and long time President, Sonny Barger. And "Frankie Diamonds" is played by real life Hells Angels member Chuck Zito.
There is no improvisation on set. The scripts are followed verbatim, and any possible change is discussed with Kurt Sutter first.
The first and last episodes of season 3 are titled SO and NS, respectively, which, when put together, spells out SONS. This is also a reference to the two rings Jax is frequently seen wearing.
Season seven marks the first time Tommy Flanagan and Tony Curran have worked together since Gladiator.
Kurt Sutter directs all of the season finales.
The "Previously on Sons of Anarchy" in every episode is spoken by different members of the cast.

Thus Hunnam chose to fully commit to his role of Jackson Teller.

Spoilers

The trivia items below may give away important plot points.

Kurt Sutter revealed in an interview that he realized Tara had to die when shooting season 2. The reason for this was that when facing the final season, Jax had to be a man completely devastated, without supports.
Charlie Hunnam playing Jax Teller has one of the highest kill counts of the entire series, with 45 direct murders by the finale, 26 of which were named. In addition to several unnamed members of the gangs of Charming (Niners, Aryans, Lin Triad, Lobos Sonora cartel, etc.).
Chibs and Tig are the only SAMCRO members to survive from the pilot episode to the end of the finale. Happy also survives the series from the pilot episode, but he was originally a member of the Tacoma charter, then he went Nomad, then finally joined SAMCRO in season 3.
Jax never learned that Gemma played a key role in his father's death.
Lee Toric was killed early on season 6 because the shooting of Vikings was sooner than originally expected, so Donal Logue could only do four episodes.
In the series finale the last words Jax says to the club are "I got this" before riding off to his death. Jax also says the same phrase to Chibs, Tig, and Bobby before using a snow globe to crush in the skull of the prison guard captain who oversaw and orchestrated the death of Opie. Those same words "I got this" are also what Opie said before being killed in the prison.
Early in season one, after discovering that Tara still had feelings for Jax, Wendy made a statement that unknowingly foreshadowed Tara's death. The statement was Gemma would never let Tara and Jax be together, and that Gemma would kill her if need be.
In seasons 6 and 7 Jax and a few other members wear "In Memory Of Opie" patches on the bottom left side of their kuttes
The only SAMCRO members that have a proper wake after they are killed are Half Sack (Johnny Lewis) & Opie Winston (Ryan Hurst).
The actual Europa Hotel in Belfast (Ireland), site of a major disaster during the Sons' Irish stopover, was once one of the most bombed sites in Northern Ireland by the IRA during "The Troubles".
The original "First 9" of SAMCRO are as follows: John "JT" Teller: founder, first club president, deceased; Piermont "Piney" Winston: co-founder, deceased; Lenny "The Pimp" Janowitz: co-founder, alive and only surviving founding member, but incarcerated for allegedly killing three ATF agents; Keith McGee: co-founder, and then president of Belfast chapter, deceased; Wally Grazer: fifth member, deceased; Thomas "Uncle Tom" Whitney: sixth member, deceased; Chico Vellenueva: first Hispanic member of SOA and provided them with a liaison between the Mayans and SOA, deceased; Otto "Lil' Killer" Moran: not to be confused with Otto Delany, deceased; Clarence "Clay" Morrow: last of the First 9 to join, became president after JT Teller, and was succeeded by JT's son Jax Teller, deceased.
Charlie Hunnam and Katey Sagal are the only actors to appear in all 92 episodes. Although Sagal spent the finale as a corpse.
Jax Teller dies on the same road, 580, as his father John Teller, crashing into a semi truck, on his father's motorcycle
Lenny "The Pimp" Janowitz, played by real life Hell's Angel Sonny Barger, is the only surviving member from the founding First 9.
Kurt Sutter had stated that he never planned to have Walton Goggins or Michael Chiklis on the show, simply because their performances/characters from The Shield (2002) would overshadow any role they had on SoA. Goggins repeatedly requested a guest appearance, to which Sutter finally replied "The only way I'll have you on this show is if you've got tits and a wig." to which Goggins replied "...alright let's do it!". As for Chiklis, Sutter decided to give him a small, but significant role in the final two episodes as the man driving the Semi that Jax crashes into, because he thought it would be poetic to have the main character from The Shield literally colliding with the main character from SoA, as both characters were the centerpiece of so much violence and death.
Marcus Alvarez is the only enemy of SAMCRO to survive from the first season to the end of the series. Though he did form an uneasy alliance with SAMCRO for later seasons. Ethan Zobelle was the main villain in season 2 he managed to escape the Club, but with Gemma on the run in the Motel room, a News clip shows a plane crash that Zobelle was flying on. Darby was also a villain in the first two seasons, but he reformed his ways and is only seen twice more in seasons 3 and 6.
In the episode where Gemma and the Sons are at her father's house in Oregon, Tig offhandedly mentions to Gemma, played by Katey Sagal, (who is in hiding as a fugitive due to a federal warrant for her arrest) that in order to go unnoticed maybe she should go redhead for awhile. Gemma then states, disgustedly, that she would rather shave her head than dye it red. This is most likely a tongue-in-cheek reference to Katey Sagal's character Peg Bundy from her show Married with Children who was known for her large bouffant red hair.
When the series explores the Sons' deeper involvement with the IRA and ultimate trip to Belfast, Northern Ireland, the episodes chronicling the chapter's period overseas are titled in Irish: "Lochan Mor" (Big Pond/Lake) (S3/E8), "Turas" (Journey/Tour) (S3/E9), "Fírinne" (Truth) (S3/E10), "Bainne" (Milk) (S3/E11). The theme song "This Life", that opens every series episode, features the addition of Irish traditional musical instruments (flutes, tin whistles) for the duration of the Irish stopover. Episode 13 (season 2) is titled "Na Trioblóidí" which is Irish for "The Troubles", a period generally pertaining to the 30-year political/religious unrest in Northern Ireland that ultimately ended with the Good Friday Agreement in 1998.
Chief Wayne Unser's Dayton Callie name has a hidden meaning... unless you speak German. The word "Unser" in German means "ours", which lines up with the fact that he was SAMCRO's inside man in the Charming police department.
In the pilot episode Jax wears a green cover, foreshadowing him wearing the same exact thing to kill Marks in the series finale.
The phone tapping device used by the Federal agents in season 2 is in actuality Pro-Tools software running off a laptop and connected to an M-Box interface. In real life it's used for audio recording and editing, not wire tapping.
Jackson "Jax" Teller died without ever knowing that his mother had some form of contribution towards John Teller's death.
Jax only wears motorcycle boots in the first and last episodes of the series. The rest of the series he wears white sneakers.
Jax makes a comment to Wendy in Season 1, saying something along the lines of, "Don't worry, I won't go all Adriana on you," referencing Drea de Matteo character and final demise in "The Sopranos" (1999)_. He also says this again to Luanne when he tells her about becoming partners in her porn business, she runs scared of him and he asks her, "You thought I was going Adriana you?"
It was Drea de Matteo who suggested Kurt Sutter to bring Wendy back to the show during season 4.
Half Sack and Opie are the only characters to receive a proper wake
Mark Boone Junior (Bobby "Elvis" Munson) and Olivia Burnette (Homeless lady/Brooke's mom) both starred in The Quick and The Dead (1995) with Leonardo DiCaprio, Sharon Stone, Russell Crowe, and Gene Hackman.

Frances Fisher (who played Honey, 2010) and Jason Barry (who played Declan, 2014) previously starred together in James Cameron's Titanic (1997). Fisher played Kate Winslet's mother, Ruth, and Barry played Leonardo DiCaprio's friend, Tommy.
