Anachronisms

The helicopter in the movie bringing the "Soviet master spy" to the abandoned monastery now serving as a training camp for the KA-spies has a Russian aircraft registration (RA-... or RF-... for govt-aircraft). In those days, the helicopter would have had a Soviet registration (CCCP-...). Additionally, the helicopter bears Russian tricolour instead of Soviet's red hammer-and-sickle flag.
In the beginning of the film when Evelyn Salt is being exchanged on the North Korean side of the bridge can be seen 2 armoured vehicles these are FV432's manufactured by GKN Sankey in 1962 for the British Army in use until the 1980's.

Audio/visual unsynchronised

When Salt is hijacking a bike in the traffic jam, she got a Triumph Street Triple R. This bike a very specific engine (3 cylinders) and has therefore a very specific sound but on the soundtrack you hear the sound of a plain motorcycle.

Character error

At the funeral, the Russian President greets the US President and First Lady, then turns his back to squeeze past them to his seat. No Russian would do that. Rather than turn your butt toward someone, Russians will turn to face the person they are passing.
Orlov's plan to assassinate the Russian and American presidents would have been much easier to carry out had he not deliberately unmasked his own double-agent.
Agent Salt doesn't pay the Cab driver after escaping the CIA building.
Orlov states his name as Oleg Vasilievich Orlov in the beginning of the movie. When CIA looks him up in the next shot, his name is stated to be Oleg Vasiliy Orlov. The way Orlov says it is correct, while the CIA officer is wrong - the second name is the paternal name (name of the father with an ending of -evich or -ovich) not a middle name.

Continuity

When Salt walks into the holding room to interrogate Orlov, she places a black plastic ashtray containing a pack of cigarettes on the corner of the table. It stays there throughout several following scenes, but has vanished when she's in the room alone.
When Evelyn is climbing on the outside of the building, in some shots her dog's head is visible sticking out of her backpack. In other shots the backpack is zipped up tight.
When Salt returns home looking for her husband, she sees a sandwich with two bites taken out of it. In the next scene during the raid by the CIA, a half-eaten sandwich is seen.
When Evelyn first goes on the run, she enters a stairwell, takes off her shoes and tosses them in the corner. The next shot shows the security camera's view. The shoes are in a different position.
When Evelyn is running through the security area, she tries to jam the door shut with a ladder, but doesn't get there in time, so she throws it on the floor. In the next scene when Winter is looking at the security camera footage it is shown to still be against the wall even though she just threw it on the floor.
During Orlov's interrogation, Salt's fingernails are painted red. During her subsequent escape and ensuing chase, there are many shots (hanging from the sides of the trucks while riding on top, especially) of her hands where her nails aren't painted at all.
Outside the Vice President's funeral, the CIA lapel pin on Ted Winter's coat changed orientation between shots.

During the interview with Vassily Orlov, Salt's wedding and engagement ring switches position from stone on top to stone on the side during a camera angle switch, then is seen in the original position with the original camera angle.

In the car chase scene involving Salt and three police, Salt overpowers the two police officers seated adjacent to her and uses a Taser on the driver, effectively taking control of the vehicle. In one shot, the car is a 2010 Chevrolet Suburban, as shown by the tail lights. In all subsequent shots, the car becomes a 2001 Chevrolet Suburban.

Errors in geography

The movie is supposed to take place during the winter time as evidenced by the fact that there were no leaves on any of the trees during the scenes in D.C. and NYC. However, during the first chase scene on the overpass which took place in D.C. there were leaves on all the trees. This is because that scene was actually filmed in Albany, NY later on during the spring.
In one of the Washington DC scenes, Salt is seen entering the Archives/Navy Memorial Metro station, and emerging from the L'Enfant Plaza station, without ever boarding a train.
Before the action moves to NY, while still in Washington, DC, there is a scene which supposedly takes place in Washington, but is recognizable to me as Riverside Dr. near W. 156th St. in NY. Although in the distance, it can be seen that a wrapper has been placed over a NYC street sign, reading something like "C Street" or "G Street" to make it appear as Washington.
As the helicopter at the end passes by the Washington Monument, we see the Ellipse and White House to its upper right. The film is reversed, as from south of the Monument the Ellipse and White House should appear to its upper left.

Factual errors

When Salt extracts venom from the spider, she inserts the needle in the abdomen. The location of the venom sacs are directly above the fangs, in the chelicerae of the spider; also there would not be nearly enough to be visible in the syringe.
Even though the CIA building has empty floors as security buffer zone, with elaborate sealing-off techniques, the window on the stairwell between the floors is neither bulletproof nor blocked with iron bars.
During the vice president's funeral, the military honor guard has no member(s) of the U.S. Coast Guard in it. Any U.S. state funeral will have U.S. Coast Guard participation along with the other four branches of the five U.S. military branches.
In one shot, a SWAT officer can be seen holding a Colt Model 933 carbine fitted with an EOTech red dot sight, the sight being mounted backwards on the weapon.
The Taser model that Salt uses to "steer" the police officer is capable of only three shots before reloading, but Salt fires it many more times to make the officer press on the gas pedal.
While escaping in the police car, Salt is in the back, the unconscious policeman has his foot on the accelerator. Salt is steering from the backseat. Close up of the policeman's foot on the gas pedal. They come to a point where they cannot go forward, she shifts into reverse gear. However, you cannot change gears unless your foot is on the brake pedal.

Revealing mistakes

When the Vice-President's coffin is carried into the church, the flag's field is at the left rear of the coffin. Either the flag is misplaced, or the coffin is being carried feet-first into the church, which is against all tradition.

Spoilers

The goof items below may give away important plot points.

Audio/visual unsynchronised

When Salt and Winter are shooting at each other Salt's gun is empty and the slide is locked back you hear her gun click three to four times. That is not possible if the slide is locked back.

Character error

Toward the end of the movie before the President is secure in his bunker, the lead Secret Service agent tells Agent Ted Winter that once the bunker door is closed, not even his own men can open it. Yet after Salt and Ted Winter fight it is shown that the police are breaking open the door to get in.

Continuity

After the explosion at the funeral Salt is left covered in dust, yet as soon as she is seen in custody in a NYPD police van she is in pristine condition.

Continuity

When Salt is in the crypt she has a Glock 9mm. When she shoots Russian President Matveyev, and pulls the gun out on Peabody the gun is now a Sig Sauer 380.

Factual errors

When captured after the funeral scene, Salt is handcuffed with her hands in front. Since the 1960s the standard is to handcuff with the hands behind their back for reasons made obvious by the next scene. Also, the NYPD car she was transferred in didn't have a divider between the driver and the back seat, for again reasons made obvious in the scene.

Factual errors

The handcuff chain that Salt uses to choke Ted Winter is obviously much longer than actual handcuffs (likely used in order to make the scene work).

Factual errors

Salt's Russian last name is stated to be Chenkov. However, in Russia and several other neighboring countries, women's last names are formed by adding an "a" to the male last name. Therefore, Salt's Russian last name should have been Chenkova.

Revealing mistakes

When Winter is killed, shots of Salt hanging off the wall reveal a dummy standing in for Liev Schreiber.

Revealing mistakes

After Salt fakes the assassination of the Russian president and the agents close in on her position, one of them kneels and checks the president's pulse. He can be seen blinking, despite supposedly being paralyzed enough to appear dead.
