There is a disclaimer at the end of the credits which states "This film is a work of fiction. It is currently illegal for New York City Police officers to live outside the state of New York."
Sylvester Stallone gained 40 pounds to add realism to his portrayal of the police officer. He also was only paid SAG minimum wages. By the time that reshoots were required, he had lost the weight again.
Originally, Ray Liotta wanted the role of Sheriff Freddy Heflin, while Sylvester Stallone wanted the role of Gary "Figgsy" Figgis.
Sylvester Stallone gained the necessary weight for the role by eating a steady diet of giant pancakes served at a local pancake house.
The sandwich scene in Robert De Niro's office was Stallone's first day shooting. The sandwiches, which were an afterthought for the actors' lunch, were improvised into the scene by De Niro.
All the actors in the film worked for scale due to the film's budget.
Many of the cast subsequently appeared in The Sopranos (1999) which is also set in New Jersey.
Robert Patrick got the part after running into actor Peter Berg and the film's producer and music supervisor, Meryl Poster, who were staying in the same hotel in New York. He got the script and then read for director James Mangold a few days later.
Arthur J. Nascarella was a real-life NYPD officer.
John Travolta, Tom Hanks, and Tom Cruise where among the actors that were considered for the role of Sheriff Freddy Heflin.
Debbie Harry acted in the movie but was edited out in the final cut. She explained on a live television special that although she was cut, she still got paid.
The long shots of Garrison, New Jersey featuring a CGI water tower was added in post-production.
In the scene in which Ray Liotta confronts Robert Patrick in the bar, the dart that Liotta shoves up Patrick's left nostril was made out of rubber.
William Kalaidjian, who presided at outdoor funeral set, was an N.Y.P.D. chaplain for many years and now ministers to veterans through the Bronx VA hospital.
The vast majority of the main cast is from either New York or New Jersey.
Peter Berg plays Officer Randone. In Very Bad Things (1998), directed by Berg, the same character appears, played by Steve Fitchpatrick.
Harvey Keitel and Robert Patrick have both portrayed the character of Jacob Fuller in From Dusk Till Dawn (1996). Keitel played Fuller in the movie while Patrick portrayed Fuller in the television series.
The film was released into cinemas uncut in the UK with a '15' rating, but the BBFC (the British censors) felt they had been too lenient and the same version was upgraded to an '18' rating for video and DVD. The Director's Cut was later passed uncut with a '15' rating.

When Cop Land (1997) was first released I thought that it was the first film in which Robert De Niro and Harvey Keitel had appeared in together. Wrong! What about Mean Streets (1973), Taxi Driver (1976) and Falling in Love (1984)?

The trivia item below may give away important plot points.

At the end of the film, when Freddy and Gary are bringing in Murray Babitch to the New York City authorities, there is one shot of Moe Tilden coming out of a building. In this one shot, his mustache is noticeably longer. James Mangold wanted to get a shot of Robert De Niro's character walking out of the building. De Niro agreed to return and appear in the shot, but could not trim his longer mustache as it was required for his character, Louis Gara, in Jackie Brown (1997).
