- Franco likes to source ingredients from small, local farmers. He has worked with agronomist Vincenzo Coppola to try to revive a native grain that has been abandoned. Agronomists are plant and soil scientists who study and try to improve the process of growing farm crops.
- Franco believes that using senses instead of technology calls for a better pizza. He calls himself the "primitive man of pizza." The only technology used at his restaurant is the thermometer used for the oven.
